Comfort Food


Sometimes when you are tired, not necessarily from physical work, but sometimes just from “all the things", the best idea for supper is comfort food. 

Food means many things. Beans and Rice is “I just paid the bills” day food. Saag is “I need spice” day food. Stir fry is “the veg drawer is almost empty” day food. But pasta is where I go most often for comfort food. 

When the kids were little we lived in Columbia, MO. One of our favorite restaurants for Sunday lunch was The Pasta Factory. It was downtown, in an old building with rustic brick and exposed pipes. They had a kid’s menu that had jokes and coloring to entertain them. Ask any of my kids what Smokey the Bear’s middle name is and they know. (the)


A favorite on their menu was Linguine with Marinated tomatoes. This dish was a cold combination of tomatoes, olives, capers, parsley and onions, marinated in a garlic heavy dressing. It was served on warm linguine. The temperature difference was part of it’s charm. A little trial and error gave me the recipe I still use.

Today at the little produce market near me, they had local(ish) tomatoes, and I decided I needed pasta. Fresh, local tomatoes make a huge difference in this dish. I usually make it in the summer because that is when I can get the best tomatoes and it feels summer-y. But even with a chill in the air, fresh tomatoes make me want  this dish.

I always have leftover marinade at the end of the meal. It will hold for a few days, but tonight I decided to also do a Krab Salad. I have thawed a 2 lb package of Krab(the Sam's size) and chopped it in the food processor along with 3 hard boiled eggs. After we have had our fill of the marinated tomatoes, the leftovers will be added to this for a great Krab Salad. 

We will eat on it for the next week. It makes great sandwiches or salads (in an avocado half – yum!), and a spoon of salad on a cucumber slice is a great appetizer.
